Oven-Fried Potato Chip Chicken
Cheddar Mashed Potatoes and Steamed PeasIngredients
- ½ cup butter, melted
- 1 (8.5-oz) pkg kettle-cooked potato chips, crushed
- ½ cup grated Parmesan cheese
- 1 tsp salt
- 2 lb boneless, skinless chicken breasts
Instructions
- Preheat oven to 400°F. Place melted butter in a shallow bowl. Stir together chips, cheese, and salt in a second shallow bowl.
- Halve chicken lengthwise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Dip chicken in melted butter; dredge in potato chip mixture, pressing gently to adhere.
- Place on a greased wire rack on a rimmed baking sheet. Let stand 20 minutes to set crust.
- Bake 20 to 25 minutes or until chicken is browned and done.

- 2 (24-oz) pkg refrigerated gluten-free mashed potatoes
- 1 cup shredded Cheddar cheese
- 1 (15-oz) pkg frozen green peas

- Heat potatoes according to package directions; stir in cheese.
- Steam peas according to package directions; season with salt and pepper to taste.
