Pan-Seared Fish with Lemon-Dill Mayo

Ingredients

  • 6 (6-oz) flounder fillets (or use tilapia)
  • ¼ cup vegetable oil
  • ⅔ cup olive-oil mayonnaise
  • 3 Tbsp chopped fresh dill
  • 2 Tbsp lemon juice
  • 1½ Tbsp dill pickle relish
  • 1 clove garlic, minced

Instructions

  1. Sprinkle both sides of fish lightly with salt and pepper. Cook fish, in 2 batches, in 2 Tbsp hot oil per batch in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Meanwhile, stir together mayonnaise, dill, lemon juice, relish, and garlic. Serve mayonnaise with fish.

Side Dish Ingredients

  • 1½ lb green beans, trimmed
  • 1 (7-oz) jar roasted red bell peppers, drained and sliced
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Steam green beans in a steamer basket over boiling water 6 minutes or until tender.
  2. Place green beans and peppers in a bowl; toss with oil. Season with salt and pepper to taste.
