Brown Rice and Sugar Snap Peas

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 onion, chopped
  • 6 oz cream cheese, cut up and softened
  • ¾ cup gluten-free chicken broth
  • 1 Tbsp everything bagel seasoning

Instructions

  1. Sprinkle chicken with salt and pepper, if desired. Cook chicken in a large nonstick skillet coated with cooking spray over medium-high heat 5 minutes. Turn chicken, and add onion to skillet; cook 5 minutes or until onion is browned and chicken is done. Remove chicken to a plate; keep warm.
  2. Add cream cheese and broth to skillet; cook 3 minutes or until thoroughly heated. Spoon sauce over chicken. Sprinkle with bagel seasoning.

  • 3 (3.5-oz) pkg boil-in-bag brown rice
  • 1 (16-oz) pkg sugar snap peas

Side Dish Instructions

  1. Cook rice and sugar snap peas according to package directions. Season peas with salt and pepper to taste.
