Brown Sugar-Balsamic Skirt Steak
Buttery Parsnip-Rosemary Mash and Green Beans

Ingredients
- ½ cup packed brown sugar
- ¼ cup balsamic vinegar
- 2 Tbsp olive oil
- 1 Tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 1½ lb skirt steak (or use flank steak)
- ½ tsp salt
- ½ tsp pepper
Instructions
- Whisk together sugar, vinegar, oil, Worcestershire, and garlic in a bowl. Rub sugar mixture all over steak. Let stand 10 to 15 minutes.
- Preheat broiler. Sprinkle steak with salt and pepper. Broil 4 to 6 minutes per side or to desired doneness. Let stand 5 to 10 minutes before slicing across the grain.
Side Dish Ingredients
- 2½ lb parsnips, peeled and sliced
- ½ cup water
- 3 Tbsp butter
- 1 Tbsp chopped fresh rosemary (or use 1 Tbsp dried crushed rosemary)
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 (12-oz) pkg green beans
Side Dish Instructions
- Microwave parsnips and water in a large microwave-safe bowl, covered, at HIGH 5 to 7 minutes or until parsnips are tender; drain and cool slightly.
- Transfer parsnips to a food processor; add butter, rosemary, and ½ tsp each salt and pepper. Process to desired consistency, scraping sides as needed. Serve with additional chopped rosemary, if desired.
- Meanwhile, cook green beans according to package directions. Sprinkle with ¼ tsp each salt and pepper.
