Crispy Sage Chicken

Cherry-Walnut Spinach Salad

Ingredients

  • 6 (4-oz) boneless, skinless chicken breasts
  • ½ tsp salt 
  • ½ cup panko breadcrumbs
  • 1 tsp dried rubbed sage
  • ½ cup mayonnaise
  • 2 Tbsp olive oil

Instructions

  1. Sprinkle chicken with salt and desired amount of pepper. Combine panko and sage in a shallow bowl. Spread mayonnaise on one side of chicken; dredge coated side in panko mixture.
  2. Cook chicken, coated side down, in hot oil in a large skillet over medium heat 5 to 6 minutes or until crisp. Turn and cook 5 to 6 minutes longer or until chicken is done.

Side Dish Ingredients

  • 1 (10-oz) pkg spinach
  • ½ cup dried cherries (or use dried cranberries)
  • ½ cup chopped walnuts (or use pecans)
  • 6 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
