Broccoli-Cauliflower Gratin

Ingredients

  • 8 cups broccoli florets
  • 8 cups cauliflower florets
  • ½ cup butter
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • ⅓ cup all-purpose flour
  • 2 cups milk
  • 1 (8-oz) round brie cheese, rind removed
  • ¼ cup sour cream
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup panko breadcrumbs

Instructions

  1. Bring broccoli, cauliflower, and water to cover to a boil in a large Dutch oven over medium-high heat. Reduce heat, and simmer 8 minutes or until vegetables are tender. Drain well, and spoon into a lightly greased 3-quart baking dish.
  2. Preheat oven to 400°F. Melt butter in same Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, 5 minutes. Add flour; cook, stirring constantly, 2 minutes.
  3. Gradually add milk, whisking until blended. Cook, whisking occasionally, until mixture is thickened and bubbly.
  4. Meanwhile, cut cheese into cubes. Gradually add cheese, stirring until melted. Stir in sour cream, salt and pepper until blended. Spoon mixture over vegetables in baking dish. Sprinkle with panko.
  5. Bake 30 to 40 minutes or until hot and bubbly.
