Portobello Hoagies with Blue Cheese Sauce
Herbed Sweet Potato Fries
Ingredients
- 2 portobello mushroom caps
- ½ small red onion, sliced
- 1½ Tbsp olive oil, divided
- ¼ tsp Greek seasoning
- ¼ cup plain Greek yogurt
- 1 tsp lemon zest
- 1 tsp fresh lemon juice
- 2 Tbsp crumbled blue cheese
- ⅔ cup baby arugula
- 2 hoagie rolls, split (preferably whole wheat)
Instructions
- Preheat grill pan to medium-high heat. Brush mushrooms and onion with 1 Tbsp oil; sprinkle with Greek seasoning.
- Grill mushrooms and onion on grill pan 5 to 7 minutes per side or until tender. Slice mushrooms.
- Combine yogurt, ½ Tbsp oil, lemon zest, lemon juice, and cheese.
- Place arugula and mushroom and onion slices on roll bottoms; Top with blue cheese sauce and roll tops.
Side Dish Ingredients
- ½ (20-oz) pkg frozen sweet potato fries
- 1 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh basil
Side Dish Instructions
- Bake fries according to package directions. Toss with parsley and basil.
