Portobello Hoagies with Blue Cheese Sauce

Ingredients

  • 2 portobello mushroom caps
  • ½ small red onion, sliced
  • 1½ Tbsp olive oil, divided
  • ¼ tsp Greek seasoning
  • ¼ cup plain Greek yogurt
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • 2 Tbsp crumbled blue cheese
  • ⅔ cup baby arugula
  • 2 hoagie rolls, split (preferably whole wheat)

Instructions

  1. Preheat grill pan to medium-high heat. Brush mushrooms and onion with 1 Tbsp oil; sprinkle with Greek seasoning.
  2. Grill mushrooms and onion on grill pan 5 to 7 minutes per side or until tender. Slice mushrooms.
  3. Combine yogurt, ½ Tbsp oil, lemon zest, lemon juice, and cheese.
  4. Place arugula and mushroom and onion slices on roll bottoms; Top with blue cheese sauce and roll tops.

Side Dish Ingredients

  • ½ (20-oz) pkg frozen sweet potato fries
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh basil

Side Dish Instructions

  1. Bake fries according to package directions. Toss with parsley and basil.
