Ingredients

  • 8 large eggs
  • 3 Tbsp butter, melted
  • 1 Tbsp water
  • 1 tsp Dijon mustard
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 green onions, chopped
  • ½ cup thinly sliced mushrooms

Instructions

  1. Preheat oven to 375°F. Lightly grease 4 (6- to 8-oz) ramekins with olive oil or cooking spray.
  2. Whisk together eggs, butter, water, mustard, salt, and pepper; stir in onions and mushrooms. Pour egg mixture into ramekins.
  3. Bake 20 to 25 minutes or until center is set. Cool 10 minutes.

  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ½ tsp salt
  • ⅛ tsp crushed red pepper
  • 4 tomatoes, quartered
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, salt, and red pepper.
  2. Place tomatoes on a platter; drizzle with dressing, and sprinkle with basil.
