Mini Mushroom Quiches
Tomatoes with Spicy Red Wine Vinaigrette
Ingredients
- 8 large eggs
- 3 Tbsp butter, melted
- 1 Tbsp water
- 1 tsp Dijon mustard
- ¾ tsp salt
- ½ tsp pepper
- 2 green onions, chopped
- ½ cup thinly sliced mushrooms
Instructions
- Preheat oven to 375°F. Lightly grease 4 (6- to 8-oz) ramekins with olive oil or cooking spray.
- Whisk together eggs, butter, water, mustard, salt, and pepper; stir in onions and mushrooms. Pour egg mixture into ramekins.
- Bake 20 to 25 minutes or until center is set. Cool 10 minutes.

- 1 Tbsp red wine vinegar
- ½ tsp salt
- ⅛ tsp crushed red pepper
- 4 tomatoes, quartered
- ¼ cup chopped fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, salt, and red pepper.
- Place tomatoes on a platter; drizzle with dressing, and sprinkle with basil.
