Pork Bolognese

Ingredients

  • ½ onion, chopped
  • 1 large carrot, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp olive oil
  • 3 Tbsp BPA-free organic tomato paste
  • ½ cup white wine
  • ½ lb lean ground pork
  • ½ lb lean ground beef
  • ¾ cup evaporated milk
  • 1 small bay leaf
  • ¼ tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Cook onion, carrot, and garlic in hot oil in a skillet over medium-high heat 4 minutes. Add tomato paste; cook 2 to 3 minutes, stirring often. Add wine, and cook 2 minutes. Transfer mixture to a 3-or 4-quart slow cooker.
  2. Add pork and beef to skillet; cook 5 minutes over medium-high heat or until browned and crumbly.
  3. Add meat, evaporated milk, bay leaf, salt, and pepper to cooker; stir. Cover and cook on LOW 4 hours; remove bay leaf before serving.

  • 1 (14-oz) pkg zucchini spirals
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook garlic, zucchini, seasoning, salt, and pepper in hot oil in a nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
