Pork Bolognese
Italian Zucchini NoodlesIngredients
- ½ onion, chopped
- 1 large carrot, chopped
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 3 Tbsp BPA-free organic tomato paste
- ½ cup white wine
- ½ lb lean ground pork
- ½ lb lean ground beef
- ¾ cup evaporated milk
- 1 small bay leaf
- ¼ tsp kosher salt
- ½ tsp pepper
Instructions
- Cook onion, carrot, and garlic in hot oil in a skillet over medium-high heat 4 minutes. Add tomato paste; cook 2 to 3 minutes, stirring often. Add wine, and cook 2 minutes. Transfer mixture to a 3-or 4-quart slow cooker.
- Add pork and beef to skillet; cook 5 minutes over medium-high heat or until browned and crumbly.
- Add meat, evaporated milk, bay leaf, salt, and pepper to cooker; stir. Cover and cook on LOW 4 hours; remove bay leaf before serving.

- 1 (14-oz) pkg zucchini spirals
- 1 tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
Side Dish Instructions
- Cook garlic, zucchini, seasoning, salt, and pepper in hot oil in a nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
