Blue Cheese, Pear, and Arugula Pizzas

Ingredients

  • 2 Tbsp olive oil
  • 2 cloves garlic, smashed
  • 2 burrito-size flour tortillas (preferably whole wheat)
  • ¼ cup thinly sliced red onion
  • 1 firm red pear, sliced
  • ¼ cup chopped walnuts
  • ½ cup crumbled blue cheese
  • 1 cup baby arugula
  • 2 tsp fresh lemon juice

Instructions

  1. Preheat oven to 450°F. Bring oil and garlic to a simmer in a small skillet over medium heat; remove from heat, and let stand 5 minutes. Discard garlic, reserving oil.
  2. Arrange tortillas on a baking sheet; brush with ½ Tbsp garlic oil.
  3. Toss onion and pear with ½ Tbsp oil; arrange on tortillas.
  4. Sprinkle pizzas with nuts and cheese; bake 5 minutes or until tortillas are crisp.
  5. Toss arugula with 1 Tbsp oil and lemon juice; sprinkle on pizzas.

Side Dish Ingredients

  • 1 avocado, chopped
  • ½ cup BPA-free chickpeas, drained and rinsed
  • 1 green onion, chopped
  • 1½ Tbsp fresh lime juice
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
