Mixed Berry Tarts

Ingredients
- 3 cups frozen mixed berries
- 1 Tbsp lemon juice
- ½ tsp lemon zest
- 2 Tbsp pure maple syrup
- 2 Tbsp cornstarch
- 1 sheet frozen puff pastry, thawed
- 1 large egg, lightly beaten
- Vanilla frozen yogurt (optional)
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper. Mix frozen berries, lemon juice, lemon zest, maple syrup, and cornstarch in a large bowl.
- Roll out thawed puff pastry, and cut into 4 rectangles. Place rectangles, 2 inches apart, on a baking sheet. Scoop berry mixture onto pastries, leaving about ½-inch border around edges. Fold edges over berries.
- Brush edges of each pastry with beaten egg. Bake 20 to 25 minutes or until golden brown. Serve with frozen yogurt, if desired.
