Sausage and Spaghetti Squash Bake

Ingredients
- 1 spaghetti squash (about 3 lb)
- 1 (19.5-oz) pkg spicy Italian turkey sausage links, casings removed
- 1 (8-oz) pkg sliced mushrooms
- 2 large eggs, lightly beaten
- 1 (15.5-oz) jar natural marinara sauce
- ¼ cup water
- 1 organic red bell pepper, chopped
- 1 onion, chopped
- ½ tsp pepper
- 1 (8-oz) block part-skim mozzarella cheese, shredded
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Prick spaghetti squash with a fork; microwave at HIGH 1 minute. Cut in half lengthwise, and remove seeds; return to microwave and cook at HIGH 9 minutes or until squash is tender.
- Cool slightly; using a fork, scrape flesh into spaghetti-like strands into a large bowl.
- Meanwhile, cook sausage in a large skillet over medium-high heat until browned and crumbly; drain.
- Add mushrooms to skillet; sauté 5 minutes or until browned.
- Combine squash, sausage, mushrooms, eggs, marinara sauce, water, bell pepper, onion, and pepper; spoon mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle with cheeses.
- Bake 30 minutes or until cheese is melted and casserole is bubbly. Let stand 10 minutes before serving.
