Cauliflower and Sweet Potato Hash

Ingredients

  • ¾ lb lean ground turkey breakfast sausage
  • 1 small onion, diced
  • 1 (12-oz) pkg cauliflower florets, coarsely chopped
  • ¾ cup low-sodium chicken broth
  • 1 (5-oz) pkg baby kale 
  • ½ cup shredded Parmesan cheese
  • ¼ tsp pepper

Instructions

  1. Cook sausage and onion in a large nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage; reserving 2 Tbsp drippings in skillet.
  2. Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
  3. Add broth and kale to skillet, cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
  4. Uncover and boil over high heat until liquid is nearly evaporated. Sprinkle with cheese and pepper; toss.
