Cauliflower and Sweet Potato Hash
Ingredients
- ¾ lb lean ground turkey breakfast sausage
- 1 small onion, diced
- 1 (12-oz) pkg cauliflower florets, coarsely chopped
- ¾ cup low-sodium chicken broth
- 1 (5-oz) pkg baby kale
- ½ cup shredded Parmesan cheese
- ¼ tsp pepper
Instructions
- Cook sausage and onion in a large nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage; reserving 2 Tbsp drippings in skillet.
- Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
- Add broth and kale to skillet, cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
- Uncover and boil over high heat until liquid is nearly evaporated. Sprinkle with cheese and pepper; toss.
