Granola Cups with Yogurt and Berries

Ingredients

  • 3 cups old-fashioned oats
  • ½ cup sweetened flaked coconut
  • ½ cup finely chopped walnuts
  • ½ cup roasted and salted sunflower seeds
  • ¼ cup honey
  • 3 Tbsp olive oil
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 3 egg whites
  • 1 (17.6-oz) carton Greek yogurt
  • 1 cup raspberries
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350°F. Stir together oats, coconut, walnuts, sunflower seeds, honey, oil, cinnamon and salt. Add egg whites, stirring to combine.
  2. Press mixture into bottom and up sides of 12 lightly greased muffin cups.
  3. Bake 15 to 20 minutes or until golden brown. Let cool in pans 20 minutes.
  4. Remove from pans and spoon desired amount of yogurt into each granola cup. Top with berries and drizzle with additional honey, if desired.
