Slow-Cooker Greek Turkey Breast

Ingredients

  • ½ cup water
  • 1 Tbsp salt-free Greek seasoning
  • ½ tsp salt
  • 1 Tbsp olive oil
  • 2 lb bone-in turkey breast

Instructions

  1. Pour water into a 5- to 7-quart slow cooker.
  2. Combine seasoning, salt, and oil; rub over turkey. Place turkey in cooker.
  3. Cover and cook on LOW 8 hours or until a meat thermometer inserted into the thickest portion of breast registers at least 165°F.

Side Dish Ingredients

  • 1 (4-oz) pkg diced pancetta
  • 1½ lb green beans, trimmed
  • 2 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • ½ tsp pepper
  • 2 (12-oz) pkg frozen roasted garlic mashed cauliflower

Side Dish Instructions

  1. Cook pancetta in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove pancetta from skillet, reserving drippings in skillet.
  2. Cook beans in hot drippings 5 minutes or until tender, stirring often.
  3. Add sugar, vinegar, and pepper, stirring until sugar dissolves; stir in pancetta.
  4. Microwave cauliflower according to package directions. Serve green beans and cauliflower alongside turkey.
