Slow-Cooker Greek Turkey Breast
Pancetta Green Beans and Cauli MashIngredients
- ½ cup water
- 1 Tbsp salt-free Greek seasoning
- ½ tsp salt
- 1 Tbsp olive oil
- 2 lb bone-in turkey breast
Instructions
- Pour water into a 5- to 7-quart slow cooker.
- Combine seasoning, salt, and oil; rub over turkey. Place turkey in cooker.
- Cover and cook on LOW 8 hours or until a meat thermometer inserted into the thickest portion of breast registers at least 165°F.
Side Dish Ingredients
- 1 (4-oz) pkg diced pancetta
- 1½ lb green beans, trimmed
- 2 Tbsp brown sugar
- 2 Tbsp balsamic vinegar
- ½ tsp pepper
- 2 (12-oz) pkg frozen roasted garlic mashed cauliflower
Side Dish Instructions
- Cook pancetta in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove pancetta from skillet, reserving drippings in skillet.
- Cook beans in hot drippings 5 minutes or until tender, stirring often.
- Add sugar, vinegar, and pepper, stirring until sugar dissolves; stir in pancetta.
- Microwave cauliflower according to package directions. Serve green beans and cauliflower alongside turkey.
