Seven Grain Salad
Fresh Melon and Tortilla ChipsIngredients
- 1 bunch radishes, halved
- 2 (12-oz) pkg asparagus tips
- 2 Tbsp minced garlic
- 5 Tbsp olive oil, divided
- ½ tsp salt
- ½ tsp pepper
- 2 (8.5-oz) pouches microwavable seven-whole-grains mix
- 1 (10-oz) pkg frozen green peas
- 2 Tbsp dill paste (or use parsley or basil paste; see Note)
- 2 (15-oz) cans cannellini beans, drained and rinsed
Instructions
- Preheat oven to 475°F. Toss together radishes, asparagus, garlic, 1 Tbsp oil, salt, and pepper on a large rimmed baking sheet. Bake 15 to 18 minutes or until vegetables begin to brown.
- Meanwhile, microwave grains and peas according to package directions. Whisk together ¼ cup oil and dill paste.
- Combine grains, beans, and vegetables; drizzle with dill oil mixture, and toss.
Side Dish Ingredients
- 1 cantaloupe or honeydew melon, sliced and chilled
- 1 (11-oz) pkg tortilla chips
Side Dish Instructions
- Serve melon and chips alongside salad.
