Sweet and Spicy Tofu Steaks

Ingredients

  • 2 (14-oz) pkg extra-firm tofu
  • 1 Tbsp lime zest
  • ½ cup lime juice
  • ¼ cup chopped fresh cilantro, divided
  • ½ cup agave nectar
  • 3 Tbsp soy sauce
  • 1½ tsp vegan chile paste with garlic
  • ¼ tsp pepper
  • 3 cloves garlic, minced

Instructions

  1. Cut each tofu block crosswise into 6 slices. Place tofu slices on several layers of paper towels; cover with additional paper towels, and gently press out moisture.
  2. Place tofu in a shallow dish. Combine lime zest, lime juice, 2 Tbsp cilantro, agave, soy sauce, chile paste, pepper, and garlic; pour over tofu, and let stand 1 hour.
  3. Preheat grill pan to medium-high heat. Remove tofu from marinade, reserving marinade. Spray tofu with cooking spray; grill 3 minutes per side or until browned.
  4. Serve with Spicy Baby Bok Choy recipe. Drizzle tofu with reserved marinade; sprinkle with 2 Tbsp cilantro.

Side Dish Ingredients

  • ¼ cup olive oil
  • 2 Tbsp rice vinegar
  • 6 heads baby bok choy, quartered
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • 1 red bell pepper

Side Dish Instructions

  1. Preheat grill pan to medium-high heat. Whisk together oil and vinegar in a small bowl.
  2. Brush oil mixture over bok choy; sprinkle with salt and crushed red pepper. Grill bok choy 2 minutes per side or until lightly browned.
  3. Brush oil mixture over bell pepper; grill bell pepper 3 to 5 minutes or until lightly charred and tender, turning often. Discard stem and seeds; dice bell pepper.
  4. Sprinkle bell pepper over bok choy.
