Marinate Ahead and Grill
Sweet and Spicy Tofu Steaks
Spicy Baby Bok Choy
Ingredients
- 2 (14-oz) pkg extra-firm tofu
- 1 Tbsp lime zest
- ½ cup lime juice
- ¼ cup chopped fresh cilantro, divided
- ½ cup agave nectar
- 3 Tbsp soy sauce
- 1½ tsp vegan chile paste with garlic
- ¼ tsp pepper
- 3 cloves garlic, minced
Instructions
- Cut each tofu block crosswise into 6 slices. Place tofu slices on several layers of paper towels; cover with additional paper towels, and gently press out moisture.
- Place tofu in a shallow dish. Combine lime zest, lime juice, 2 Tbsp cilantro, agave, soy sauce, chile paste, pepper, and garlic; pour over tofu, and let stand 1 hour.
- Preheat grill pan to medium-high heat. Remove tofu from marinade, reserving marinade. Spray tofu with cooking spray; grill 3 minutes per side or until browned.
- Serve with Spicy Baby Bok Choy recipe. Drizzle tofu with reserved marinade; sprinkle with 2 Tbsp cilantro.
Side Dish Ingredients
- ¼ cup olive oil
- 2 Tbsp rice vinegar
- 6 heads baby bok choy, quartered
- ½ tsp salt
- ¼ tsp crushed red pepper
- 1 red bell pepper
Side Dish Instructions
- Preheat grill pan to medium-high heat. Whisk together oil and vinegar in a small bowl.
- Brush oil mixture over bok choy; sprinkle with salt and crushed red pepper. Grill bok choy 2 minutes per side or until lightly browned.
- Brush oil mixture over bell pepper; grill bell pepper 3 to 5 minutes or until lightly charred and tender, turning often. Discard stem and seeds; dice bell pepper.
- Sprinkle bell pepper over bok choy.
