Ranch Chicken Enchiladas

Ingredients
- 1½ lb boneless, skinless chicken breasts, cubed
- 1 Tbsp Ranch dressing mix
- 12 soft taco-size flour tortillas
- ¾ cup salsa
- ½ cup Ranch dressing
- 1 cup shredded Mexican-blend cheese
- ¼ cup chopped fresh cilantro
Instructions
- Preheat broiler. Sprinkle chicken with dressing mix. Cook chicken in a large nonstick skillet coated with cooking spray 6 to 8 minutes or until chicken is done.
- Divide chicken among tortillas; roll up, and place, seam sides down, in a 14- x 10-inch baking dish or two smaller baking dishes coated with cooking spray. Stir together salsa and dressing. Spoon over rolled tortillas; sprinkle with cheese.
- Broil 2 minutes or until cheese melts. Sprinkle with cilantro.
