Ingredients

  • 12 oz whole wheat spaghetti
  • 1½ lb boneless, skinless chicken thighs, cubed
  • 1 Tbsp salt-free Cajun seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 6 Roma tomatoes, seeded and chopped
  • 3 Tbsp minced garlic
  • ¾ cup heavy cream
  • ¾ cup low-sodium chicken broth
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, sprinkle chicken with seasoning, salt, and pepper. Cook in hot oil in a large skillet over medium-high heat 6 minutes or until browned.
  3. Add tomatoes and garlic; cook 2 minutes. Add cream and broth; cook 5 minutes or until sauce thickens. Serve over pasta. Sprinkle with parsley, if desired.
