Cajun Chicken Pasta

Ingredients
- 12 oz whole wheat spaghetti
- 1½ lb boneless, skinless chicken thighs, cubed
- 1 Tbsp salt-free Cajun seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 6 Roma tomatoes, seeded and chopped
- 3 Tbsp minced garlic
- ¾ cup heavy cream
- ¾ cup low-sodium chicken broth
- ¼ cup chopped fresh parsley (optional)
Instructions
- Cook pasta according to package directions.
- Meanwhile, sprinkle chicken with seasoning, salt, and pepper. Cook in hot oil in a large skillet over medium-high heat 6 minutes or until browned.
- Add tomatoes and garlic; cook 2 minutes. Add cream and broth; cook 5 minutes or until sauce thickens. Serve over pasta. Sprinkle with parsley, if desired.
