Baked Salmon with Spinach and Tomatoes
Ingredients
- 2 (9-oz) pkg spinach
- 2 Tbsp olive oil
- 6 (6-oz) salmon fillets
- 2 Tbsp fresh orange juice
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 2 Roma tomatoes, thinly sliced
- 2 Tbsp chopped fresh dill
Instructions
- Preheat oven to 425°F. Toss together spinach and oil on a foil-lined rimmed baking sheet; spread in a single layer.
- Arrange fish on spinach; drizzle with orange juice, and rub with garlic, salt, and pepper. Top fish with tomatoes; sprinkle with dill.
- Bake 12 to 15 minutes or until fish flakes with a fork.
