Baked Salmon with Spinach and Tomatoes

Ingredients

  • 2 (9-oz) pkg spinach
  • 2 Tbsp olive oil
  • 6 (6-oz) salmon fillets
  • 2 Tbsp fresh orange juice
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Roma tomatoes, thinly sliced
  • 2 Tbsp chopped fresh dill

Instructions

  1. Preheat oven to 425°F. Toss together spinach and oil on a foil-lined rimmed baking sheet; spread in a single layer.
  2. Arrange fish on spinach; drizzle with orange juice, and rub with garlic, salt, and pepper. Top fish with tomatoes; sprinkle with dill.
  3. Bake 12 to 15 minutes or until fish flakes with a fork.
