Hawaiian Chicken Kabobs
Sweet Green Beans and Rice
Ingredients
- ½ cup honey-barbecue sauce
- ⅓ cup soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 1 tsp ground ginger
- 2 lb boneless, skinless chicken breasts, cut into 1½-inch cubes
- 1 peeled and cored pineapple, cut into 1½-inch cubes
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together barbecue sauce, soy sauce, vinegar, oil, and ginger in a small bowl.
- Skewer chicken and pineapple on metal skewers as desired; place on a baking sheet, and brush with half of sauce.
- Grill skewers on greased grill rack 5 to 6 minutes per side or until chicken is done, basting with reserved sauce halfway through grilling. Serve over rice.
Side Dish Ingredients
- 4 Tbsp butter, melted
- ¼ cup packed brown sugar
- ½ tsp garlic powder
- 2 (14.5-oz) cans cut green beans, drained
- 5 slices bacon, chopped
- 2 cups long-grain white rice
Side Dish Instructions
- Heat oven to at 400°F. Toss together melted butter, brown sugar, garlic powder, and green beans in a 9-inch baking dish. Sprinkle with bacon.
- Bake 20 minutes or until hot and bubbly.
- Steam rice according to package directions.
