Hawaiian Chicken Kabobs

Ingredients

  • ½ cup honey-barbecue sauce
  • ⅓ cup soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 tsp ground ginger
  • 2 lb boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 1 peeled and cored pineapple, cut into 1½-inch cubes

Instructions

  1. Preheat grill or grill pan to medium-high heat. Whisk together barbecue sauce, soy sauce, vinegar, oil, and ginger in a small bowl.
  2. Skewer chicken and pineapple on metal skewers as desired; place on a baking sheet, and brush with half of sauce.
  3. Grill skewers on greased grill rack 5 to 6 minutes per side or until chicken is done, basting with reserved sauce halfway through grilling. Serve over rice.

Side Dish Ingredients

  • 4 Tbsp butter, melted
  • ¼ cup packed brown sugar
  • ½ tsp garlic powder
  • 2 (14.5-oz) cans cut green beans, drained
  • 5 slices bacon, chopped
  • 2 cups long-grain white rice

Side Dish Instructions

  1. Heat oven to at 400°F. Toss together melted butter, brown sugar, garlic powder, and green beans in a 9-inch baking dish. Sprinkle with bacon.
  2. Bake 20 minutes or until hot and bubbly.
  3. Steam rice according to package directions.
