Tex-Mex French Bread Pizzas

Ingredients

  • 1 lb ground beef
  • 1 (10-oz) can green enchilada sauce
  • 1½ cups frozen corn
  • 2 tsp ground cumin
  • 1 (14.8-oz) loaf Italian bread, halved lengthwise
  • 2 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (8-oz) carton sour cream (optional)
  • 1 (8-oz) container guacamole (optional)

Instructions

  1. Preheat oven to 400°F. Cook beef in a large skillet over medium heat until browned and crumbly; drain, and return to skillet.
  2. Add enchilada sauce, corn, and cumin; cook over medium heat, stirring occasionally, 5 minutes.
  3. Place bread, cut sides up on a baking sheet. Sprinkle each with 1 cup cheese. Top each with beef mixture, and sprinkle with remaining cheese.
  4. Bake 15 to 20 minutes or until bread is crisp and cheese is melted. Serve with sour cream and guacamole for dipping.
