Chicken Kofta Hummus Bowls
Ingredients
- ¾ lb ground chicken (or use ground turkey)
- ¼ cup chopped onion
- 3 Tbsp chopped fresh parsley, divided
- 1 Tbsp chopped fresh mint
- ½ tsp ground cumin
- ½ tsp ground coriander
- ⅛ tsp ground cinnamon
- ⅛ tsp salt
- ½ (12-oz) pkg frozen riced cauliflower
- ½ (10-oz) pkg chopped romaine lettuce
- ¼ English cucumber, sliced
- ½ (10-oz) container plain hummus
- ¼ cup roasted bell peppers, sliced
- ¼ cup pitted kalamata olives
Instructions
- Preheat grill or grill pan to medium-high heat. Combine chicken, onion, 2 Tbsp parsley, mint, cumin, coriander, cinnamon, and salt.
- Shape onto 6 oblong patties; thread onto 6 metal or bamboo skewers.
- Coat chicken with cooking spray. Grill 6 to 8 minutes or until done, turning occasionally.
- Cook cauliflower according to package directions.
- Divide lettuce and cauliflower among 3 bowls. Top with cucumber, hummus, bell peppers, olives, kabobs, and 1 Tbsp parsley.
