Sabra Classic Guacamole

Ingredients

  • 2 fresh plant-based burger patties
  • 1 onion, chopped
  • 2 tsp salt-free Southwest seasoning
  • 2 cups baby spinach
  • 4 soft taco-size flour tortillas (preferably whole wheat)
  • 1 cup shredded reduced-fat Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Crumble patties into a large skillet; add onion and seasoning, and cook over medium-high heat 6 to 8 minutes or until browned and crumbly. Add spinach; cook 2 minutes or until wilted.
  2. Coat one side of tortillas with nonstick spray, and place, sprayed sides down, on a large rimmed baking sheet.
  3. Divide beef mixture among tortillas, placing ingredients on one half of each tortilla. Top with cheese. Fold tortillas in half.
  4. Bake 6 minutes, and flip. Bake 6 to 7 minutes longer or until tortillas are browned and cheese is melted. Cut into wedges.
