White Bean and Kale Soup

Ingredients

  • ½ cup chopped onion
  • 1 carrot, sliced
  • ½ Tbsp chopped fresh rosemary
  • 1 Tbsp olive oil
  • 3 cups organic vegetable broth
  • 1 (15-oz) can BPA-free white beans, drained and rinsed
  • ⅛ tsp black pepper
  • ⅛ tsp crushed red pepper
  • ⅛ tsp salt
  • 1 (5-oz) pkg organic baby kale
  • ½ Tbsp white wine vinegar

Instructions

  1. Sauté onion, carrot, and rosemary in hot oil in a Dutch oven until vegetables are tender. Add broth, beans, black pepper, red pepper, and salt. Cover and simmer 20 minutes.
  2. Stir in kale; cook 5 minutes or until wilted and tender. Stir in vinegar before serving.

Side Dish Ingredients

  • 3 organic pears, halved and cored
  • 1 oz crumbled goat cheese
  • 2 Tbsp chopped walnuts
  • 1 Tbsp honey

Side Dish Instructions

  1. Place 2 pear halves, cut sides up, on each of 3 plates; crumble cheese on pears.
  2. Toast nuts in a dry skillet over medium heat until fragrant. Sprinkle nuts over cheese, and drizzle with honey.
