White Bean and Kale Soup
Pear Salad
Ingredients
- ½ cup chopped onion
- 1 carrot, sliced
- ½ Tbsp chopped fresh rosemary
- 1 Tbsp olive oil
- 3 cups organic vegetable broth
- 1 (15-oz) can BPA-free white beans, drained and rinsed
- ⅛ tsp black pepper
- ⅛ tsp crushed red pepper
- ⅛ tsp salt
- 1 (5-oz) pkg organic baby kale
- ½ Tbsp white wine vinegar
Instructions
- Sauté onion, carrot, and rosemary in hot oil in a Dutch oven until vegetables are tender. Add broth, beans, black pepper, red pepper, and salt. Cover and simmer 20 minutes.
- Stir in kale; cook 5 minutes or until wilted and tender. Stir in vinegar before serving.
Side Dish Ingredients
- 3 organic pears, halved and cored
- 1 oz crumbled goat cheese
- 2 Tbsp chopped walnuts
- 1 Tbsp honey
Side Dish Instructions
- Place 2 pear halves, cut sides up, on each of 3 plates; crumble cheese on pears.
- Toast nuts in a dry skillet over medium heat until fragrant. Sprinkle nuts over cheese, and drizzle with honey.
