Sweet and Spicy Pork Medallions

Ingredients

  • 1 Tbsp fresh lime juice
  • 1 Tbsp honey
  • 2 tsp rice vinegar
  • 2 tsp dark sesame oil
  • ½ tsp Sriracha hot sauce (or use other hot sauce)
  • 2 tsp fish sauce (optional)
  • ½ lb pork tenderloin, trimmed
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp chopped fresh cilantro (optional)

Instructions

  1. Whisk together lime juice, honey, vinegar, oil, Sriracha, and, if desired, fish sauce.
  2. Cut pork into ½-inch-thick medallions. Sprinkle pork with salt and pepper. Brush half of honey mixture on pork. Reserve remaining mixture.
  3. Sear pork in a nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until done.
  4. Drizzle pork with reserved sauce; sprinkle with cilantro, if desired.

  • 1 large carrot
  • ½ small head napa cabbage, shredded
  • ¼ cup chopped green onions
  • 1 clove garlic, minced
  • 1 Tbsp dark sesame oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Peel carrot into long thin ribbons using a vegetable peeler.
  2. Cook carrot, cabbage, onions, and garlic in hot oil in a skillet over medium-high heat 3 to 4 minutes or until just tender. Sprinkle with salt and pepper.
