Sweet and Spicy Pork Medallions
Quick Napa Cabbage and Carrot Sauté
Ingredients
- 1 Tbsp fresh lime juice
- 1 Tbsp honey
- 2 tsp rice vinegar
- 2 tsp dark sesame oil
- ½ tsp Sriracha hot sauce (or use other hot sauce)
- 2 tsp fish sauce (optional)
- ½ lb pork tenderloin, trimmed
- ⅛ tsp salt
- ¼ tsp pepper
- 2 Tbsp chopped fresh cilantro (optional)
Instructions
- Whisk together lime juice, honey, vinegar, oil, Sriracha, and, if desired, fish sauce.
- Cut pork into ½-inch-thick medallions. Sprinkle pork with salt and pepper. Brush half of honey mixture on pork. Reserve remaining mixture.
- Sear pork in a nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until done.
- Drizzle pork with reserved sauce; sprinkle with cilantro, if desired.

- 1 large carrot
- ½ small head napa cabbage, shredded
- ¼ cup chopped green onions
- 1 clove garlic, minced
- 1 Tbsp dark sesame oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Peel carrot into long thin ribbons using a vegetable peeler.
- Cook carrot, cabbage, onions, and garlic in hot oil in a skillet over medium-high heat 3 to 4 minutes or until just tender. Sprinkle with salt and pepper.
