Healthy Apple-Raisin Muffins

Ingredients

  • 1¾ cups whole wheat flour
  • 2 tsp baking soda
  • 2 tsp apple pie spice
  • ½ tsp salt
  • 3 large eggs
  • ½ cup packed brown sugar
  • ½ cup canola oil
  • ⅓ cup 1% low-fat milk
  • 1 tsp vanilla extract
  • 2 large carrots, grated
  • 1 large Granny Smith apple, cored and grated
  • ½ cup golden raisins
  • ½ cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Whisk together flour, baking soda, pie spice, and salt in a large bowl.
  2. Whisk together eggs, brown sugar, oil, milk, and vanilla in a separate bowl until blended; stir in carrots and apple.
  3. Pour egg mixture into dry ingredients, stirring with a wooden spoon or rubber spatula just until blended. Gently fold in raisins and nuts just until blended.
  4. Spoon batter into 2 lightly greased 12-cup muffin pans.
  5. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes before serving.
