Beef and Pumpkin Chili

Ingredients

  • ½ lb ground beef
  • 1 green bell pepper, chopped
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • ½ (15-oz) can pumpkin puree
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 Tbsp chili powder
  • ½ Tbsp ground cumin
  • ¼ cup sour cream

Instructions

  1. Cook beef, bell pepper, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
  2. Stir in broth, pumpkin, tomatoes, chili powder, and cumin; bring to a boil, reduce heat, and simmer 20 minutes. Top each serving with sour cream.
