Beef and Pumpkin Chili
Tortilla ChipsIngredients
- ½ lb ground beef
- 1 green bell pepper, chopped
- ½ cup chopped onion
- 2 cloves garlic, minced
- 2 cups beef broth
- ½ (15-oz) can pumpkin puree
- 1 (14.5-oz) can petite diced tomatoes
- 1 Tbsp chili powder
- ½ Tbsp ground cumin
- ¼ cup sour cream
Instructions
- Cook beef, bell pepper, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
- Stir in broth, pumpkin, tomatoes, chili powder, and cumin; bring to a boil, reduce heat, and simmer 20 minutes. Top each serving with sour cream.
