Quick Huevos Rancheros
Ingredients
- 1 small green bell pepper, finely chopped
- 1 clove garlic, minced
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1 tomato, chopped
- 1 Tbsp chopped green onion
- 1 Tbsp lime juice
- 8 large eggs
- 2 avocados, sliced
Instructions
- Cook bell pepper, garlic, and ¼ tsp each salt and pepper in 2 Tbsp hot oil in a large nonstick skillet over medium heat 3 to 4 minutes or until bell pepper is crisp-tender.
- Add tomato; cook 1 minute or until thoroughly heated. Transfer tomato mixture to a bowl; stir in onion and lime juice. Set aside.
- Wipe skillet clean. Heat 1 Tbsp oil in skillet over medium heat. Crack 4 eggs into skillet.
- Cook 3 minutes or until whites are set and yolks are cooked to desired doneness. Repeat with remaining 4 eggs.
- Divide avocado among 4 plates; top with fried eggs and salsa. Sprinkle with ¼ tsp each salt and pepper.
