Blueberry-Maple Breakfast Pork Sausage
Lemon-Roasted Asparagus
Ingredients
- 1 lb ground pork
- 1 large egg, lightly beaten
- ½ cup blueberries
- 2 tsp maple syrup
- 1 tsp dried rubbed sage
- 1 tsp garlic salt
- ½ tsp crushed red pepper
- 3 Tbsp olive oil, divided
Instructions
- Gently mix together all ingredients except oil in a large bowl until blended. Shape pork mixture into 8 patties.
- Cook patties, in batches, in 1½ Tbsp oil per batch in a large skillet over medium-high heat 4 minutes per side or until centers are no longer pink. Drain on paper towels.

- ¾ lb thin asparagus, trimmed
- ½ tsp lemon zest
- 2 Tbsp olive oil
- ¼ tsp garlic salt
- ¼ tsp pepper
- 1½ Tbsp lemon juice
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients except lemon juice on a rimmed baking sheet; spread asparagus in a single layer.
- Bake 6 minutes or until asparagus is crisp-tender; drizzle with lemon juice.
