Ground Turkey-Squash Casserole
Spring Mix Salad with Pita Croutons
Ingredients
- ½ lb ground turkey
- ½ cup chopped onion
- 3 yellow squash (about 2½ lb), sliced
- ½ (10.5-oz) can cream of chicken soup
- 2 Tbsp water
- ½ cup sour cream
- 1 Tbsp butter
- 1 cup crumbled round buttery crackers
Instructions
- Cook turkey and onion in a large skillet over medium heat until turkey is browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
- Add squash, soup, and water to cooker. Cover and cook on LOW 6 hours or until squash is tender. Stir in sour cream .
- Melt butter in a large skillet over medium heat; add cracker crumbs, and cook, stirring often, 2 to 3 minutes or until lightly toasted.
- Spoon turkey mixture on plates, and top with toasted cracker crumbs.
Side Dish Ingredients
- 1 pita bread round, cut into 6 wedges
- 2 tsp olive oil
- 3 cups spring mix
- 1 Roma tomato, sliced
- ½ cup shredded carrots
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Preheat oven to 400°F. Arrange pita wedges on a baking sheet; brush with oil. Bake 12 minutes or until crisp.
- Toss together spring mix, tomatoes, carrots, and vinaigrette in a bowl. Sprinkle with pita croutons.
