Ground Turkey-Squash Casserole

Ingredients

  • ½ lb ground turkey
  • ½ cup chopped onion
  • 3 yellow squash (about 2½ lb), sliced
  • ½ (10.5-oz) can cream of chicken soup
  • 2 Tbsp water
  • ½ cup sour cream
  • 1 Tbsp butter
  • 1 cup crumbled round buttery crackers

Instructions

  1. Cook turkey and onion in a large skillet over medium heat until turkey is browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
  2. Add squash, soup, and water to cooker. Cover and cook on LOW 6 hours or until squash is tender. Stir in sour cream .
  3. Melt butter in a large skillet over medium heat; add cracker crumbs, and cook, stirring often, 2 to 3 minutes or until lightly toasted.
  4. Spoon turkey mixture on plates, and top with toasted cracker crumbs.

Side Dish Ingredients

  • 1 pita bread round, cut into 6 wedges
  • 2 tsp olive oil
  • 3 cups spring mix
  • 1 Roma tomato, sliced
  • ½ cup shredded carrots
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Preheat oven to 400°F. Arrange pita wedges on a baking sheet; brush with oil. Bake 12 minutes or until crisp.
  2. Toss together spring mix, tomatoes, carrots, and vinaigrette in a bowl. Sprinkle with pita croutons.
