Chicken and Sausage Gumbo
Hush Puppies with Cajun Dipping Sauce
Ingredients
- ½ lb boneless, skinless chicken breasts, cut into 2-inch pieces
- ½ (12-oz) pkg frozen sliced okra
- ½ (10-oz) pkg frozen seasoning blend
- ½ (1-lb) pkg Cajun smoked sausage, cut into 2-inch pieces
- 1 (14.5-oz) can petite diced tomatoes
- 1 cup low-sodium chicken broth
- 1½ tsp salt-free Cajun seasoning
- ¾ cup uncooked long grain white rice
Instructions
- Combine chicken, okra, seasoning blend, sausage, tomatoes, broth, and seasoning in a 3- to 4-quart slow cooker.
- Cover and cook on LOW 8 hours or until chicken is very tender.
- Meanwhile, cook rice according to package directions. Serve gumbo over rice.

- ⅓ cup sour cream
- ⅓ cup mayonnaise
- 1 tsp salt-free Cajun seasoning
Side Dish Instructions
- Cook hush puppies according to package directions.
- Stir together sour cream, mayonnaise, and Cajun seasoning in a bowl. Serve hush puppies with sauce.
