Chicken and Sausage Gumbo

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • ½ (12-oz) pkg frozen sliced okra
  • ½ (10-oz) pkg frozen seasoning blend
  • ½ (1-lb) pkg Cajun smoked sausage, cut into 2-inch pieces
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1½ tsp salt-free Cajun seasoning
  • ¾ cup uncooked long grain white rice

Instructions

  1. Combine chicken, okra, seasoning blend, sausage, tomatoes, broth, and seasoning in a 3- to 4-quart slow cooker.
  2. Cover and cook on LOW 8 hours or until chicken is very tender.
  3. Meanwhile, cook rice according to package directions. Serve gumbo over rice.

  • ½ (16-oz) pkg frozen hush puppies
  • ⅓ cup sour cream
  • ⅓ cup mayonnaise
  • 1 tsp salt-free Cajun seasoning

Side Dish Instructions

  1. Cook hush puppies according to package directions.
  2. Stir together sour cream, mayonnaise, and Cajun seasoning in a bowl. Serve hush puppies with sauce.
