Meatball Skewers with Marinara Sauce

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 large egg, lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp olive oil
  • ½ cup marinara sauce, heated

Instructions

  1. Combine beef, garlic, Italian seasoning, egg, salt, and pepper; shape into 1-inch meatballs.
  2. Cook meatballs in hot oil in a large skillet over medium heat 4 to 5 minutes or until browned and centers are no longer pink, stirring often.
  3. Thread meatballs onto wooden picks or skewers. Serve with marinara sauce for dipping.

  • 1 Tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (5-oz) pkg baby spinach
  • ¾ cup chopped fresh basil
  • 1 tomato, seeded and chopped

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, salt, and pepper in a large bowl. Add spinach, basil, and tomato; toss.
