Fish Stick Tostadas
Refried Beans
Ingredients
- 1 (19-oz) pkg frozen breaded fish sticks
- 2 Tbsp taco seasoning mix (or use fajita seasoning)
- ½ (12-count) pkg tostada shells
- 1 (16-oz) container guacamole
- 1 (16-oz) container pico de gallo
- 1 (8-oz) carton sour cream
- 2 cups shredded colby-Jack or triple Cheddar cheese
- ½ cup chopped fresh cilantro
- Lime wedges
Instructions
- Spray frozen fish sticks with olive oil cooking spray in a large bowl. Toss fish sticks with seasoning. Arrange fish sticks on a greased baking sheet. Bake according to package directions.
- Meanwhile, spray 6 tostada shells with cooking spray, and heat according to package directions. Spread guacamole on warm tostada shells; top with crispy fish sticks, pico de gallo, sour cream, cheese, and cilantro. Serve with lime. Serve hot.

- 1 (31-oz) can refried beans
- ½ cup sour cream
- ⅓ cup chopped fresh cilantro
Side Dish Instructions
- Heat beans with sour cream and cilantro in a small saucepan over medium-low heat. Season with salt and pepper to taste.
