Ingredients

  • ¾ lb ground beef
  • ½ Tbsp olive oil
  • ¼ onion, halved and sliced
  • 1 tsp minced garlic
  • ½ (8-oz) pkg sliced mushrooms
  • 6 Tbsp low-sodium beef broth
  • ½ cup sour cream

Instructions

  1. Cook beef in a nonstick skillet 6 minutes or until browned and crumbly. Drain, reserving drippings in skillet.
  2. Heat oil in drippings in skillet over medium-high heat. Cook onion, garlic, and mushrooms in hot oil, stirring often, 4 to 6 minutes or until tender; return beef to skillet.
  3. Add broth and sour cream to skillet, gently stirring to combine. Reduce heat to medium, and cook 3 minutes or until slightly thickened. Serve over Sautéed Zoodles recipe.

Side Dish Ingredients

  • ½ lb zucchini
  • ½ Tbsp olive oil

Side Dish Instructions

  1. Cut zucchini into noodles using a spiralizer. Or cut zucchini lengthwise into slices; stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  2. Cook zucchini in hot oil in a skillet over medium-high heat 2 to 3 minutes or until tender. Season with salt and pepper to taste.
