Creamy Chicken Divan Soup

Ingredients

  • 1 Tbsp butter
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 3 cups low-sodium chicken broth
  • ½ (12-oz) pkg broccoli florets
  • ⅓ cup softened cream cheese
  • 1½ cups chopped rotisserie chicken
  • ½ (8-oz) block sharp Cheddar cheese, shredded

Instructions

  1. Melt butter in a saucepan over medium-high heat. Add onion; cook 6 minutes or until tender. Add garlic; cook 2 minutes.
  2. Stir in broth and broccoli; cover and bring to a boil. Reduce heat, and simmer 15 minutes or until broccoli is tender. Stir in cream cheese until melted. Remove from heat; cool 10 minutes.
  3. Process soup until smooth using an immersion blender or in a blender with center of lid removed so heat can escape.
  4. Return soup to pot; stir in chicken and Cheddar. Cook, stirring occasionally, until cheese is melted.
