Cheesy Chicken and Tortellini
Mandarin and Apple SaladIngredients
- 2 lb boneless, skinless chicken breasts, cubed
- 2 tsp Italian seasoning
- 2 Tbsp butter
- 1 (24-oz) jar pasta sauce
- 1 cup chicken broth
- 2 (9-oz) pkg refrigerated cheese tortellini
- 1 cup shredded mozzarella cheese
Instructions
- Sprinkle chicken with seasoning. Melt butter in a large nonstick skillet over medium-high heat; add chicken, and cook 5 to 6 minutes or until browned.
- Stir in pasta sauce and broth; bring to a boil, stir in pasta. Cover, reduce heat, and simmer, stirring occasionally, 5 to 6 minutes or until pasta is tender. Sprinkle with cheese, and let stand 2 minutes or until cheese is melted.
Side Dish Ingredients
- 1 (9-oz) pkg chopped romaine mix
- 1 (15-oz) can mandarin oranges, drained
- 1 Granny Smith apple, chopped
- ⅓ cup balsamic dressing

- Toss together all ingredients just before serving.
