Ground Beef Taco Bowls

Ingredients

  • 2 cups long-grain white rice
  • 1½ lb ground beef
  • ½ cup chopped onion
  • 1 (12.5-oz) pkg soft-taco dinner kit 
  • ⅓ cup water
  • 2 (9.1-oz) pkg Southwest chopped salad kits
  • 2 tomatoes, chopped
  • 1 (8-oz) container guacamole
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook beef and onion in a large nonstick skillet over medium heat until beef is browned and crumbly. Drain and return to skillet. Add taco seasoning mix from kit and water; bring to a boil, reduce heat, and simmer until very thick.
  3. Divide rice among 6 bowls. Combine salad and dressing from salad kits; spoon over rice in bowls, and top with beef mixture. Top with tomatoes, guacamole, cilantro, salad kit toppings, and taco sauce from kit.
  4. Heat soft taco shells from kit according to package directions. Serve with taco bowls.
