Barbecue-Ranch Chicken Salad

Ingredients

  • ½ cup Ranch dressing
  • ½ cup barbecue sauce
  • 1 head romaine lettuce, shredded
  • 1 green bell pepper, chopped
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can corn, drained
  • Reserved shredded chicken (from Sweet and Sour Barbecue Chicken recipe)
  • 1 cup shredded Cheddar cheese
  • 2 tomatoes, chopped
  • 2 avocados, chopped
  • 1 (3-oz) pkg French fried onions

Instructions

  1. Stir together Ranch dressing and barbecue sauce in a large bowl.
  2. Add lettuce, bell pepper, beans, corn, chicken, cheese, tomatoes, and avocados; toss. Toss with fried onions just before serving.

Side Dish Ingredients

  • 6 frozen Texas cheese toasts

Side Dish Instructions

  1. Bake toast according to package directions.
