Greek Salad Pita Wraps with Feta Slaw
Sweet Potato Fries
Ingredients
- Reserved shredded roast (from Roasted Garlic and Beef Mushroom Roast recipe)
- 3 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 Tbsp Dijon mustard
- 1 (16-oz) pkg tricolor coleslaw
- ¾ cup crumbled feta cheese
- 6 pita bread rounds, halved
- 3 Roma tomatoes, thinly sliced
Instructions
- Warm beef in microwave, if desired.
- Whisk together oil, lemon juice, and mustard in a large bowl. Add coleslaw and cheese; toss.
- Stuff beef and slaw in pita halves; top with tomatoes.
Side Dish Ingredients
- 1 (20-oz) bag frozen sweet potato fries
- 2 Tbsp chopped fresh parsley
Side Dish Instructions
- Bake fries according to package directions. Sprinkle with parsley.
