Collard Greens and Sausage over Rice
Honey and Orange Roasted Sweet Potatoes
Ingredients
- ¾ lb ground pork sausage
- 1 (16-oz) pkg sliced collard greens
- 1 onion, thinly sliced
- 4 cloves garlic, chopped
- 2 cups low-sodium chicken broth
- 2 cups long-grain rice
Instructions
- Cook sausage in a skillet over medium heat 6 to 8 minutes or until meat is browned and crumbly; drain on paper towels.
- Combine sausage, greens, onion, garlic, and broth in a 5- to 7-quart slow cooker.
- Cover and cook on LOW 8 hours or until greens are tender.
- Meanwhile, cook rice according to package directions; serve collard mixture over rice.
Side Dish Ingredients
- 2 lb sweet potatoes, cut into 1-inch chunks
- 3 Tbsp butter, melted
- 3 Tbsp honey
- 1 Tbsp orange juice
- ¼ tsp ground red pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 30 to 40 minutes or until potatoes are tender and edges are crisp, turning halfway through baking.
