Collard Greens and Sausage over Rice

Ingredients

  • ¾ lb ground pork sausage
  • 1 (16-oz) pkg sliced collard greens
  • 1 onion, thinly sliced
  • 4 cloves garlic, chopped
  • 2 cups low-sodium chicken broth
  • 2 cups long-grain rice

Instructions

  1. Cook sausage in a skillet over medium heat 6 to 8 minutes or until meat is browned and crumbly; drain on paper towels.
  2. Combine sausage, greens, onion, garlic, and broth in a 5- to 7-quart slow cooker.
  3. Cover and cook on LOW 8 hours or until greens are tender.
  4. Meanwhile, cook rice according to package directions; serve collard mixture over rice.

Side Dish Ingredients

  • 2 lb sweet potatoes, cut into 1-inch chunks
  • 3 Tbsp butter, melted
  • 3 Tbsp honey
  • 1 Tbsp orange juice
  • ¼ tsp ground red pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 30 to 40 minutes or until potatoes are tender and edges are crisp, turning halfway through baking.
