Caprese Frittata
Strawberry-Yogurt Parfaits
Ingredients
- 2 clove garlic, minced
- 1 Tbsp olive oil
- 6 large eggs, lightly beaten
- ½ cup shredded mozzarella cheese
- ¼ cup 2% reduced-fat milk
- ¼ tsp salt
- ¼ tsp pepper
- 1 tomato, sliced
- 2 Tbsp fresh basil leaves
Instructions
- Preheat oven to 375°F. Cook garlic in hot oil in a small ovenproof skillet over medium heat 30 seconds or until fragrant.
- Whisk together eggs, cheese, milk, salt, and pepper in a large bowl; gradually pour into skillet. Arrange tomato slices in skillet over eggs. Transfer skillet to oven.
- Bake 15 to 18 minutes or until frittata is set and beginning to brown. Sprinkle with basil.
Side Dish Ingredients
- ½ (16-oz) pkg strawberries, sliced
- 1½ tsp fresh lemon juice
- 1 cup plain Greek yogurt
- 1 Tbsp honey (or use agave nectar)
- ½ cup chopped walnuts
Side Dish Instructions
- Combine berries and lemon juice in a medium bowl; stir together yogurt and honey in another small bowl.
- Spoon half of berries into 3 glasses or bowls; top with half of yogurt mixture and half of nuts.
- Repeat with remaining berries, yogurt, and nuts.
