Easy Oven Salmon

Ingredients
- 3 (6-oz) salmon fillets
- ¼ tsp dried crushed rosemary (or use fresh rosemary)
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F. Place fillets on a rimmed baking sheet. Sprinkle with rosemary, salt, and pepper. Bake 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1 Tbsp light butter with canola oil
- 1 lb carrots, sliced
- ¼ tsp salt
- ¼ cup chopped pecans
- 1½ Tbsp maple syrup
- 1½ tsp brown sugar
- ½ cup crumbled goat cheese (or use feta)
Side Dish Instructions
- Melt butter in a large skillet over medium-high heat. Add carrots and salt; cook 8 minutes or until lightly browned.
- Add nuts, syrup, and sugar, stirring to coat. Cook 3 minutes or until nuts are fragrant and carrots are tender. Sprinkle with cheese.
