Easy Oven Salmon

Pecan-Goat Cheese Carrots

Ingredients

  • 3 (6-oz) salmon fillets
  • ¼ tsp dried crushed rosemary (or use fresh rosemary)
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 425°F. Place fillets on a rimmed baking sheet. Sprinkle with rosemary, salt, and pepper. Bake 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 Tbsp light butter with canola oil 
  • 1 lb carrots, sliced
  • ¼ tsp salt
  • ¼ cup chopped pecans
  • 1½ Tbsp maple syrup
  • 1½ tsp brown sugar
  • ½ cup crumbled goat cheese (or use feta)

Side Dish Instructions

  1. Melt butter in a large skillet over medium-high heat. Add carrots and salt; cook 8 minutes or until lightly browned.
  2. Add nuts, syrup, and sugar, stirring to coat. Cook 3 minutes or until nuts are fragrant and carrots are tender. Sprinkle with cheese.
