Creamy Lemon-Mascarpone Pasta

Ingredients

  • ½ (16-oz) pkg whole-grain linguine
  • 1 lemon
  • ½ (8-oz) container mascarpone cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup freshly grated Romano cheese
  • Chopped fresh basil or parsley (optional)

Instructions

  1. Cook pasta according to package directions. Meanwhile, grate zest and squeeze juice from lemon to equal ½ tsp zest and 1 Tbsp juice. Drain pasta, reserving ½ cup water, and return to pot.
  2. Cook pasta, lemon juice, lemon zest, mascarpone cheese, and enough pasta water to make a thin sauce over medium-low heat, stirring until combined.
  3. Season with salt and pepper. Serve pasta sprinkled with cheese and, if desired, fresh herbs.
