Creamy Lemon-Mascarpone Pasta
Ingredients
- ½ (16-oz) pkg whole-grain linguine
- 1 lemon
- ½ (8-oz) container mascarpone cheese
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup freshly grated Romano cheese
- Chopped fresh basil or parsley (optional)
Instructions
- Cook pasta according to package directions. Meanwhile, grate zest and squeeze juice from lemon to equal ½ tsp zest and 1 Tbsp juice. Drain pasta, reserving ½ cup water, and return to pot.
- Cook pasta, lemon juice, lemon zest, mascarpone cheese, and enough pasta water to make a thin sauce over medium-low heat, stirring until combined.
- Season with salt and pepper. Serve pasta sprinkled with cheese and, if desired, fresh herbs.
