Tomato and Cucumber Bruschetta
Ingredients
- 1 thin French baguette, cut into ¼-inch-thick slices
- 1 (8-oz) pkg cream cheese, softened
- 1 (4-oz) log goat cheese, softened
- 1½ tsp pepper, divided
- 4 Roma tomatoes, diced
- 1½ cups diced English cucumber
- 2 Tbsp chopped fresh parsley
- 1 Tbsp olive oil
- ½ tsp garlic salt
Instructions
- Preheat oven to 400°F.
- Arrange baguette slices on a baking sheet, and bake 10 to 12 minutes or until toasted. Cool completely.
- Stir together cream cheese, goat cheese, and 1 tsp pepper in a small bowl. Spread mixture over cooled baguette slices.
- Combine tomatoes, cucumber, parsley, oil, garlic salt, and remaining ½ tsp pepper in a medium bowl. Spoon over cheese mixture. Serve immediately.
