Tomato and Cucumber Bruschetta

Ingredients

  • 1 thin French baguette, cut into ¼-inch-thick slices
  • 1 (8-oz) pkg cream cheese, softened
  • 1 (4-oz) log goat cheese, softened
  • 1½ tsp pepper, divided
  • 4 Roma tomatoes, diced
  • 1½ cups diced English cucumber
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp olive oil
  • ½ tsp garlic salt

Instructions

  1. Preheat oven to 400°F.
  2. Arrange baguette slices on a baking sheet, and bake 10 to 12 minutes or until toasted. Cool completely.
  3. Stir together cream cheese, goat cheese, and 1 tsp pepper in a small bowl. Spread mixture over cooled baguette slices.
  4. Combine tomatoes, cucumber, parsley, oil, garlic salt, and remaining ½ tsp pepper in a medium bowl. Spoon over cheese mixture. Serve immediately.
