Sweet Potato-Smoked Sausage Frittata

Ingredients

  • 1 (12-oz) pkg Italian style smoked chicken sausage, sliced
  • 3 cups frozen cubed sweet potatoes
  • 1 onion, chopped
  • 2 cups chopped baby spinach
  • 1 cup 2% reduced-fat milk
  • 10 large eggs
  • ¾ tsp salt
  • ¾ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook sausage in a large cast-iron or ovenproof skillet over medium-high heat 4 to 6 minutes or until browned. Remove from skillet.
  2. Add potatoes and onion to skillet; cook 5 to 7 minutes or until potato is just tender. Stir in spinach until wilted.
  3. Meanwhile, whisk together milk, eggs, salt, and pepper in a bowl; pour egg mixture and sausage over potatoes. Bake 15 minutes or until center is set.

  • 2 apples, chopped
  • 2 pears, chopped
  • ½ lb seedless red grapes
  • ¾ cup pomegranate seeds (arils)

  1. Combine all ingredients in a bowl; chill until ready to serve.
