Sweet Potato-Smoked Sausage Frittata
Fruit Salad
Ingredients
- 1 (12-oz) pkg Italian style smoked chicken sausage, sliced
- 3 cups frozen cubed sweet potatoes
- 1 onion, chopped
- 2 cups chopped baby spinach
- 1 cup 2% reduced-fat milk
- 10 large eggs
- ¾ tsp salt
- ¾ tsp pepper
Instructions
- Preheat oven to 400°F. Cook sausage in a large cast-iron or ovenproof skillet over medium-high heat 4 to 6 minutes or until browned. Remove from skillet.
- Add potatoes and onion to skillet; cook 5 to 7 minutes or until potato is just tender. Stir in spinach until wilted.
- Meanwhile, whisk together milk, eggs, salt, and pepper in a bowl; pour egg mixture and sausage over potatoes. Bake 15 minutes or until center is set.

- 2 apples, chopped
- 2 pears, chopped
- ½ lb seedless red grapes
- ¾ cup pomegranate seeds (arils)

- Combine all ingredients in a bowl; chill until ready to serve.
