Shrimp Burgers

Ingredients

  • 2 lb unpeeled wild-caught, medium-size raw shrimp
  • ¾ cup panko breadcrumbs (preferably whole wheat)
  • ½ cup finely chopped bell pepper (any color)
  • ½ cup olive-oil mayonnaise, divided
  • ½ tsp ground cumin
  • 2 green onions, chopped
  • 1 large egg
  • 1 tsp Creole seasoning
  • ½ tsp pepper
  • ¼ tsp salt
  • 6 hamburger buns (preferably whole wheat)
  • 2 Roma tomatoes, sliced
  • 6 iceberg lettuce leaves

Instructions

  1. Peel and devein shrimp; pulse shrimp in a food processor until minced. Combine shrimp, panko, bell pepper, ⅓ cup mayonnaise, cumin, green onions, and egg; stir until blended.
  2. Gently shape into 6 patties; sprinkle with seasoning, pepper, and salt; cover and chill patties 2 hours or until slightly firm.
  3. Cook patties, in 2 batches, in a greased nonstick skillet over medium heat 4 to 5 minutes per side or until done. Shrimp will turn pink and firm up.
  4. Serve patties on buns with remaining mayonnaise, tomatoes, and lettuce.
