Shrimp Burgers
Ingredients
- 2 lb unpeeled wild-caught, medium-size raw shrimp
- ¾ cup panko breadcrumbs (preferably whole wheat)
- ½ cup finely chopped bell pepper (any color)
- ½ cup olive-oil mayonnaise, divided
- ½ tsp ground cumin
- 2 green onions, chopped
- 1 large egg
- 1 tsp Creole seasoning
- ½ tsp pepper
- ¼ tsp salt
- 6 hamburger buns (preferably whole wheat)
- 2 Roma tomatoes, sliced
- 6 iceberg lettuce leaves
Instructions
- Peel and devein shrimp; pulse shrimp in a food processor until minced. Combine shrimp, panko, bell pepper, ⅓ cup mayonnaise, cumin, green onions, and egg; stir until blended.
- Gently shape into 6 patties; sprinkle with seasoning, pepper, and salt; cover and chill patties 2 hours or until slightly firm.
- Cook patties, in 2 batches, in a greased nonstick skillet over medium heat 4 to 5 minutes per side or until done. Shrimp will turn pink and firm up.
- Serve patties on buns with remaining mayonnaise, tomatoes, and lettuce.
