Italian Chicken Sausages, Apples, and Onions

Ingredients

  • 1 (12-oz) pkg fully cooked Italian chicken sausage links, cut into ½-inch-thick slices
  • 1 onion, sliced
  • ½ green bell pepper, sliced
  • 1½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Gala apple, sliced

Instructions

  1. Cook sausage in a Dutch oven coated with cooking spray over medium-high heat 5 to 6 minutes or until browned. Remove from pot, reserving drippings in pot.
  2. Add onion, bell pepper, seasoning, salt, and pepper to hot drippings. Reduce heat to medium; cook 5 to 7 minutes or until onion is very tender, stirring constantly.
  3. Add apple; cook 3 minutes or until tender. Return sausages to pot; cook 2 to 3 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 (5-oz) pkg baby spinach
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook spinach and garlic in hot oil in a large skillet over medium heat 6 minutes or until spinach wilts, stirring often. Stir in vinegar and salt.
