Sheet Pan Salmon, Potatoes, and Broccoli

Ingredients

  • 1 crown broccoli, cut into florets
  • ¾ lb Yukon Gold potatoes, thinly sliced
  • ½ red onion, cut into wedges
  • 2½ Tbsp olive oil, divided
  • 3 (6-oz) salmon fillets
  • ½ cup mayonnaise
  • 1½ Tbsp lemon juice
  • 1½ tsp chopped fresh rosemary

Instructions

  1. Preheat oven to 450°F. Toss together broccoli, potatoes, onion, and 2 Tbsp oil on a large rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
  2. Bake 15 minutes. Carefully arrange fish over vegetables on baking sheet; brush with ½ Tbsp oil, and season lightly with salt and pepper. Bake 8 to 10 minutes or until fish flakes with a fork.
  3. Stir together mayonnaise, lemon juice, and rosemary. Serve with fish and vegetables.
