Sheet Pan Salmon, Potatoes, and Broccoli
Ingredients
- 1 crown broccoli, cut into florets
- ¾ lb Yukon Gold potatoes, thinly sliced
- ½ red onion, cut into wedges
- 2½ Tbsp olive oil, divided
- 3 (6-oz) salmon fillets
- ½ cup mayonnaise
- 1½ Tbsp lemon juice
- 1½ tsp chopped fresh rosemary
Instructions
- Preheat oven to 450°F. Toss together broccoli, potatoes, onion, and 2 Tbsp oil on a large rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
- Bake 15 minutes. Carefully arrange fish over vegetables on baking sheet; brush with ½ Tbsp oil, and season lightly with salt and pepper. Bake 8 to 10 minutes or until fish flakes with a fork.
- Stir together mayonnaise, lemon juice, and rosemary. Serve with fish and vegetables.
