Lemon-Dill Parmesan Cod
Apricot-Pistachio Salad
Ingredients
- 18 frozen Parmesan-crusted fish fillets
- ½ cup mayonnaise
- 3 Tbsp chopped fresh dill
- 2 Tbsp lemon juice
- 1 tsp Italian seasoning
Instructions
- Bake fish according to package directions.
- Meanwhile, combine mayonnaise, dill, lemon juice, and seasoning. Serve mayonnaise mixture with fish.

- ⅓ cup chopped dried apricots
- ⅓ cup chopped pistachios (or use walnuts)
- ⅓ cup lemon vinaigrette
